Yields 10 people

Ingredients for the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Place all the ingredients into a pot, bring to a light boil, mixing to dissolve. Next, take off the heat and leave to cool down completely. Decant into a sterilised bottle, seal keeping it chilled, where it will keep for about four weeks.

Preparing the Cocktail Base: Mix the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then strain best through muslin, so it's fully clarified.

For serving: Pour 85ml of your premix into your cocktail shaker containing ice, gently stirring gently for a minute to cool it down. Pour to a chilled martini glass or equivalent, decorate with a few cranberries and finish using a brief mist with the mandarin essence over the top.
